So I've got approximately 30-40 lbs of scrap meat from a couple deer in the freezer at my parents that I completely forgot was in there until they reminded me recently. Usually I just take deer to the processor, so excuse my ignorance on the following questions. First question: the deer were taken December of 2011, is the meat still good (it's been frozen the whole time)? Second question: what can I do with it and how do I do it? I'm sure I can make jerky, snack sticks, sausage, or more hamburger meat out of it but I've never done it. I've got access to a smoker, and I'm sure I'm gonna have to buy a grinder and drying racks but I'm trying to buy as little as possible for the time being. Thanks for your help!
